In 2008, one of my good friends got married. Her family and her then fiancé are from Trinidad, so they opted for a destination wedding. Knowing how much I have always been into mixology, she requested I create a signature drink for her wedding. I was so excited to create something unique that celebrated their nuptials. We, of course, had a tasting of various options that captured the vibe of their Trini culture and festive spirit. The Golden Tobago was one of 2 drinks selected as a signature drink for the event.
Instructions:
1.5 ounces apricot juice
1.5 ounces dark rum
0.25 ounce cardamom syrup
0.25 ounce fresh lemon juice
Combine all ingredients in an ice-filled shaker. Shake well & strain into a cardamom & sugar-rimmed martini glass.
